Lyophilization also referred to as freeze drying, is a process in which water is completely removed from a product after it is frozen and kept under a vacuum. This process allows the ice to change its state directly from solid to vapor without passing through a liquid phase. The process involves three separate, unique, and interdependent processes. The stepwise process includes freezing, primary drying (sublimation), and secondary drying (desorption). It keeps the materials frozen and thus, preserves the product with its essential properties.
